Relatives who took early exits may be telling us something
All the information available on the internet provides an opportunity to research family trees, and in many cases, find out the causes of death of relatives who share our genes. From what we've learned by adopting a plant-based diet, we believe that many of their health problems were diet related, including heart issues, strokes, and type 2 diabetes. Past diet-related family health issues are an indicator of what we might expect in our future.
 

Not ready to exit?
The recipes and information in this blog and our cookbook, Our Daily Bread, have been compiled for the use of our family, friends and others. We felt compelled to gather this information and develop strategies for daily whole foods plant-based home cooking because of the very real health implications we are seeing for us all...and the surprising benefits for our planet (more on the benefits of plant-based living on the environment in later blogs).

Me neither. And furthermore, I want food that tastes good!
We hope the information in this blog will help you adopt a plant-based diet so that you can fully enjoy your lives, in good health!

Cholesterol: It has a face 
Mark's amazing health improvement inspired us to revise our diet and rework our favorite recipes to eliminate cholesterol. 

Cholesterol is only in animal-products. At a McDougall Seminar, we learned an easy way to think about what ingredients to eliminate: If an ingredient has a face - fish, cow, chicken, alligator, you name it - it contains cholesterol.

If it has roots - plants, trees, apples to zucchini - it does not contain cholesterol!


Goal: Eliminate Ingredients with a Face from my 40+ years of Family Recipes
I wanted my husband to be able to eat everything served at our table. The goal, to eliminate cholesterol from my cooking by not using any product with a "face," set me on a new path, and has made a wonderful difference in our lives! It's been educational, provided lots of "food for thought," we've met interesting and fun people, and golly gee, I'm feeling great.

*Because changing any habit necessitates developing thoughtful strategies and support structures to succeed, we found cooking tools and appliances the do most of the work for us. We took field trips to non-chain restaurants to sample plant-based/vegan meals prepared by trained professional chefs, collected new recipes, purchased new herbs and spices, then finally applied our new knowledge to revising old family favorites. The result? Now our family's favorite recipes won't clog our arteries, and our food tastes even better!


We've changed what's served at our table, and now we're bound to living this plant-based life where ever we go. Hence this blog...stay tuned!

Potato Latkes along with these notes:
 
"potato latkes - ended up being more like hash browns for us - but we were able to use leftover cilantro (and even preserved them by drying cilantro in the oven) - gave a great texture"

 
Vegan Potato Latkes (Potato Pancakes)
Makes around 10 small pancakes

Adapted from Vegnews

Ingredients

2 big potatoes (~ 500 gms)
1 small onion, grated
1/4 cup all purpose flour
few tablespoons of chopped coriander/cilantro
salt - to taste
(Optional spices) - 1 tsp cumin powder, 1/2 tsp chili powder, 1 tsp coriander powder
few Tbsp of oil, for shallow frying

Preparation

1. Peel and grate the potatoes. Squeeze out excess liquid from the potatoes. Place the grated potatoes in a bowl and add grated onion, flour, cilantro, salt, cumin powder, chili powder and coriander powder. Mix well. Don't add any water.

2. In a skillet, add a Tbsp of oil. Take a heaping tablespoon of batter and flatten it before gently placing it in hot oil. Make three or four more potato pancakes and add to skillet without crowding pan. Cook on low-medium heat until golden brown on both sides.

3. Repeat with remaining potato mixture, adding more oil as necessary. Remove cooked potato pancakes to paper towels to drain excess oil. Transfer to an ovenproof platter (if serving a little later) and keep warm in oven until all pancakes are cooked. Serve.

Guess the Ingredients

They're All Plant-based
Often at meals we play a Guess the Ingredients tasting game. The dessert recipe below would be great for this game, because the delicious ingredient that provides the creamy texture - avocado - doesn't contribute much of its signature flavor.

To celebrate two August birthdays, I wanted to try something new, so I searched online for a vegan cake, and came across this decadent chocolate dessert recipe. It's awesome!


*Called a torte, I'm sure Julia Child would agree, serving this dessert would make any gathering a party!

Chilled Double Chocolate Torte: No-Bake

No Bake Chocolate Crust

2 cups *pecans
1/4 cup cocoa powder
2 Tbsp coconut oil (other light taste oil may work)
1/4 cup pure maple syrup
1 tsp pure vanilla extract
1/2 tsp kosher salt

Chocolate Avocado Mousse Filling 
2 cups avocado flesh (approx 3 small avocados), pitted and scooped out
1/3 cup almond milk (or other non-dairy milk)
2/3 cup pure maple syrup
1 Tbsp smooth peanut butter (or other nut or sunflower seed butter)
1 Tbsp arrowroot powder
1/4 tsp kosher salt
1 tsp pure vanilla extract
1 cup + 2 Tbsp chocolate chips, melted
1/4 cup cocoa powder, sifted if clumpy

Directions

Crust: Oil a 7-10 inch spring form pan and line it with a circle of parchment paper. In a food processor, pulse the pecans until crumbly. Be careful not to over process them as you still want them a bit chunky. Now add in the rest of the crust ingredients and pulse until just mixed. Scoop mixture onto prepared pan and press down firmly and evenly with slightly wet fingers or a spatula. Pop into freezer to set while making the mousse.

Chocolate mousse: Place all mousse ingredients (except chocolate chips) into food processor. Process until smooth. In a small bowl, melt your chocolate chips in the microwave and scoop melted chocolate into food processor mixture. Process until smooth.

Put them together: Remove crust from freezer and scoop this mousse on top of crust. Smooth out as much as possible and then place in the freezer for 2 hours to firm.

Once firm, remove from freezer and allow to sit on the counter for about 5-10 minutes before serving chilled. Place leftover torte in the freezer wrapped and placed in a seal container.

Note: this torte should be served chilled as it gets soft at room temperature
 
*On a recent road trip, we stopped at a farm stand in Chillicothe, Texas and bought the most delicious fresh pecans! (They have a cute gift selection, too.) Here's the website: www.ValleyPecans.com. As they say on their website, their pecans are "dang good!"

Spiced and Herbed Quinoa With Green Onions
Serves 4
Spiced and Herbed Quinoa with Green Onions (KAT TEUTSCH)











 
1 cup quinoa
2 cups vegetable stock or water
1/2 cup hothouse cucumber, diced
1/2 cup tomato, diced
2 tablespoons red onion, diced
2 green onions, thinly sliced
2 tablespoons chopped cilantro
1 teaspoon chopped jalapeƱo
3 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice


1. In a small pot, combine the quinoa and stock (or water) and bring to a boil. Reduce the heat to a simmer and cover. Cook for 10 to 15 minutes or until the liquid has been absorbed. Let cool completely.

2. In a large bowl, combine the quinoa with the remaining ingredients. Toss to mix thoroughly. Serve chilled.

Nutrients per serving: 268 calories, 6g protein, 34g carbohydrates, 3g fiber, 13g fat (2g saturated fat), 0mg cholesterol, 483mg sodium

Our Change in Direction Began with our Dentist

Because the rheumatic fever my husband had as a teenager can damage heart valves, when his teeth were cleaned, he needed to take an antibiotic to protect his heart valves from bacterial infection. In the spring of 2009, our dentist suggested that my husband have an x-ray of his heart valves, because if they were not damaged, then he would not need the antibiotic.

Well, his heart valves were not damaged, but…the x-rays showed partial blockages in several arteries. 


Whoa, Slow Down
His cardiologist informed us, like millions of Americans, Mark was one of the unfortunate many who would likely die or be disabled by a sudden heart attack or stroke. Ninety percent of heart attacks strike with no warning, 50% are fatal, and most of the rest are disabling. In-spite of a lack of symptoms, he said Mark’s disease was certain, progressive and that there was nothing he could do about it and to prepare for an early death or disability.

He said Mark probably had bad heart genes and put him on a bag of prescriptions. 

This is NOT a Dead End!

Despite the scary, depressing and discouraging news, we are forever grateful for the 90 minutes his cardiologist took from his extremely busy schedule, to fully explain what really causes a "heart attack." Because understanding the true causes of heart attacks provided a direction to health.

Remembering a comment his dad had made years ago, that Grandpa Cook's heart problems cleared up when he was unable to eat for six weeks, Mark immediately stopped eating anything with cholesterol in it, that means all meat and dairy products.

A New Direction…

Within 6 weeks, Mark was so successful that the rapid lowering of his HDL/LDL numbers even surprised his doctor! That was 70 pounds ago. He is now free of all those prescriptions!

Mid-Course Correction

In the spring of 2009, my husband received notice that the well-traveled road ahead was narrowing and would probably become blocked.

We had two options: We could continue to travel the same road, slow down and shorten our journey together, or make a mid-course correction into unchartered territory.

We opted for unchartered territory. Well, unchartered territory for us. In exploring this new territory, we’ve changed our lives!
 
This blog is all about the discoveries, the heroes, the food, the adventures and the terrific people we meet as we explore this new territory.
